It seems as if all I’ve been eating lately is food served in those little paper boats with the red + white picnic style print. Truth is, I really don’t give a damn how my food is served, as long as it fills my tummy and puts on smile on my face. So naturally I made my way to Noble Knots a few days back with hopes of turning my hungry frown upside down. It all started with a recommendation from a friend who couldn’t stop raving about their sandwiches. After eagle eyeing their movements on Twitter (@NobleKnots), it was time to see what they were all about.
Noble Knots is headed by a pair of some very cool peeps. Chef Kate Nealis and Kelly have been selling artisan sandwiches on locally crafted pretzel rolls for over 3 months and their food-fan base seems to grow by the day. They’ve also established an awesome partnership the Foremost Baking Company to help with the supplying of their bread and fresh pretzel rolls. And the result? A made from scratch menu of sandwiches, small bites and daily specials. For me, it was pretty much love at first bite!
Tater Tots – Here’s Chef Nealis’ rendition of the school cafeteria classic. Fried to golden perfection, these gobs of shredded potatoes are seasoned and accompanied by a honey-mustard aioli. Don’t second guess yourself. Just order them.
Braised Short Rib – I kept catching myself picking off the short rib from my sandwich and eating it straight up. The beer onions seemed to fuse right into the shredded chunks of the short rib and boy what a sandwich this was.
Pulled Pork – Yikes. This was my favorite of the two here. The tender pork had a slight sweetness to it and really paired well with the pretzel roll. And anything topped with Pepper Jack cheese is a winner in my book.
