Yep. You guessed it. Another food truck review. I wasn’t lying when I mentioned I’ve been on a food truck binge lately. Today we’re featuring Frank and the good folks over at Paco’s Tacos Truck. For a little over 2 months now, Paco’s Tacos has been shelling out SoCal style Mexican food to hungry walkers and wanderers all over Providence. With 30+ years experience in the food industry, Frank ultimately decided to venture into the food truck business after reading about Kogi’s success story out in Los Angeles.
Their menu is short and sweet with the traditional lineup of tacos, quesadillas and nachos. Currently, shredded chicken and beef (slow cooked for hours) provide the protein, but Frank mentioned that the addition of carnitas (roasted pork) is in the works. I also discovered that Frank gets his tortillas from Sanchez Tortilleria on Atwells in Providence which definitely earns points in my book. Loaded Nachos – Mounds of house made tortilla chips are topped with black beans, shredded cheese, chopped green peppers and cotija cheese. The nachos are perfectly crisp and not the least bit oily and you can immediately taste the difference knowing these are made right on the truck.
Shredded Beef Burrito – A great ratio of beef, cheese, sour cream and rice. The burrito didn’t fall apart and can pretty much be described as delicousness wrapped in a tortilla.
Roll Tacos – Three cripsy tacos are filled with your choice of shredded chicken or beef and are accompanied by a side of lettuce, chopped tomatoes and cotija cheese.
Tostadas – An open-faced taco if you want to call it that. You could even call them mini taco pizzas. Whatever you decide on, just know that they will be tasty as f*ck.
